Food and preparation conversations

Dish names and recipes vary. These are prompts for a conversation, not a list of foods that are automatically unsafe.

Sauces, oils and marinades

Soy sauce can contain wheat, and blended sauces may contain several allergens. Ask about the exact brand or ingredient list when possible.

Woks, fryers and utensils

A wok, oil, ladle, strainer or cutting surface may be used for many dishes. Ask whether clean equipment and fresh oil can be used.

Regional variation

The same English dish name can describe different recipes. Check the specific kitchen’s ingredients rather than relying on experience at another restaurant.

Questions to ask the restaurant

  • Can the kitchen check every ingredient, sauce, garnish and cooking oil used in this dish?
  • Is the same fryer, grill, pan, knife, board or serving utensil used for my allergen?
  • Can my meal be prepared with clean hands, clean utensils and a clean preparation area?
  • If the kitchen cannot confirm the ingredients or cross-contact controls, what unopened or simply prepared option is available?

Before you go

  • Save the Simplified Chinese card and screenshots of each allergen name.
  • Arrange how you will contact your insurer or medical assistance provider.
  • Carry a paper backup and your clinician-provided emergency plan.
  • Check current official advice for the exact region you will visit.
